Today was Christmas in Ethiopia! The boys had a snow day and were home from school so mid morning I decided it would be fun to throw together an Ethiopian Christmas dinner for our family! Due to dietary restrictions I had to modify most of the recipes to make them AIP and we weren't able to have injera, but I was able to successfully make a yummy meal!
I pulled out a bunch of the decor we got while we were in Ethiopia and also got to use my new table cloth that my sweet friend, Peggy, had hand stitched for me by some women in Ziway, Ethiopia! I absolutely love it!
I gave Miss A a new Ethiopian dress to wear today and she adored it! She wore it to the chiropractor and the grocery store complete with her winter coat and snow boots! haha! She told everyone she saw that it was "Opia Tismas" and to look at her pretty dress!
My dinner! I had planned to make a Fall Harvest Chicken dish for our supper before I tried to incorporate Ethiopian food into the meal. So we had that with Shiro Wat, Tikel Gomen (Cabbage Dish), Ingudai Tibs (sauteed mushrooms) and Selata (tossed salad w/ citrus vinaigrette).
Miss A loves coffee, especially Opia coffee so she was thrilled with both the coffee and popcorn!

I too took note to the no shirt!! Looks just like my boys nearly everyday they aren't in school!! Haha. What is with that???
So sweet!!! Those pictures in her dress are adorable!!! I bet my boys wouldn't like coffee either - well, actually, I'm sure of it- but they would like the popcorn too!:)
I wondered about that:). Glad I saw it before you edited it since I still can't get on your private blog:(. Not sure why either.
